Banana Sheet Cake

Don't you love sheet cakes? They're so easy to make and are perfect for large gatherings. Take this banana sheet cake. Like our banana bread it has wonderful banana flavor, but with a little more sweetness, and a tangy cream cheese frosting. One batch easily makes 30 servings, convenient for pot lucks and tailgates. This recipe comes from my friend Kelsey Fischer and her mom Janeen and is a family favorite of theirs. I've made a few slight adjustments, added some lemon juice to the frosting to give it more tang, and added a some vanilla to the cake batter. My dad gives it a strong two thumbs up and declares it "a keeper". Enjoy!

Hot Dogs with Pineapple Bacon Relish

Hot Dogs with Pineapple Bacon Relish

You know you've made something good when it disappears faster than the backside of Usain Bolt. No need to beg your loved ones to take seconds on these hot dogs. You'll be lucky if there are any left for you! Chop up some fresh pineapple, and mix it in with chopped bacon, onions, and sweet pickles. Pile the relish over a sizzling hot dog and enjoy. Watch out, it's messy, but I think that's just how it goes with hot dogs and relish. Slather on some mustard too. You may as well go full-on mess while you're at it.

Stir Fried Japanese Eggplant with Ginger and Miso

Eggplant has always been a rather challenging vegetable for me. Usually I get these big whoppers that stare at me for a week before I finally roast them and make baba ganoush. Eggplant isn't like green beans or broccoli that you can just steam and top with butter. You really need to do something with it. Fortunately, Japanese eggplant is, in my opinion, a lot easier to work with than globe eggplant. These asian eggplants are long and narrow, are much more delicate on the inside and have more tender skin. They're lovely. This recipe for Japanese eggplant stir-fried with ginger in a miso sake sauce comes from my friend Nancy Hachisu's stunning new cookbook, Japanese Farm Food (great book!), and according to Nancy, is her husband Tadaki's "soul food".
