Oh, holidays can be loaded, can't they? What to make/get/do for Mom on Mother's Day? What should we cook? Should we go out? These are common questions, and these recipes will help you answer them.

Some of these dishes can be made ahead of time, such as the Baked Blueberry French Toast or the Smoked Salmon Torta. This way, you can spend Sunday morning lazing about with your mom (or your kids!) and just pop it in the oven.

Other recipes are really well suited if you want to make something extra-special that requires a little more culinary finesse, such as the Asparagus Soufflé or Crepes.

Get the kids involved for the pancakes—tiny hands can add blueberries to the batter! Or have them line up all the toasted slices of bread for the Mushroom Toast with Fried Egg. Making breakfast together can be just as special as eating it.

Fluffy Buttermilk Pancakes from Scratch

We make pancakes weekly in our house. Most of the time, I substitute half of the all-purpose flour with spelt or whole wheat pastry flour and top our pancakes with fruit, but sometimes it's nice to go with a classic like Buttermilk Pancakes.

For this recipe, I wanted to make fluffy, light, and airy buttermilk pancakes with crisp edges, and a slightly sweet, buttery flavor. Forty pancakes later, I was happy with my results: I finally figured out how to avoid the common pitfalls of dense, chewy, eggy, or rubbery pancakes.

In my early days of cooking, I had a friend from California who introduced me to what she called Texas Enchiladas. Instead of the usual filled and rolled enchiladas, the tortillas were fried, dipped in sauce, sandwiched with filling and then stacked in layers.

I have not been able to discover the exact origin of this version of enchiladas, but I think they are popular in Northern Mexico, west Texas and in New Mexico.

The bottom line: delicioso!

I spent some time last week stocking up on spring produce — nothing gets me feeling more inspired to step into the kitchen than new, seasonal veggies!

This week I aimed for variety of recipes: a vegetarian meal, a few that aren't, plus a comfort food favorite for Friday evening. Both pasta dishes are great reheated, so if you want to really get yourself organized (or, like me, tackle some meal prep once the kiddo is asleep) they're good ones to do in advance.

Friday's lasagna feeds a crowd, so use it as an excuse to invite a few friends over – or freeze leftovers for a desperate dinnerless night in the future.
