This Week’s Meal Plan: 5 Dinners to Beat the Heat

For those of you that live in the States and are celebrating the 4th today, we hope you have a relaxing day celebrating in your favorite ways.

Most of our team will be grilling with our families, so as we look to the week ahead we’re thinking about lighter fare. Our answer? Hearty salads.

All it takes is a bit of inspiration to tweak all of those garden greens into something you'd want to center your meals around. The simple addition of noodles or rice and your favorite protein can elevate your salads to entrée-level status.

We’ve got the week planned out with our BLT Salad and Asian Tuna Salad as well as a Caprese Pasta Salad you’ll want to make on repeat all summer long. While it’s not technically a salad and more of a whole grain bowl, our Black Bean Burrito Bowl takes taco salad to the next level and for nights when you really just don’t want to deal: Sesame Noodle Salad couldn’t be easier.

One last thing: Looking for more dinner ideas? Want to see nutritional facts on your recipes? We recently launched our new paid meal plan service. We have delicious meal plans to suit every taste and lifestyle. This month, our focus is on Dinner in a Flash – perfect for fun-filled summer days when no one feels much like spending the afternoon in the kitchen.

Feel Good Friday: Rosie Lee Tompkin’s quilts and a cheatsheet for critical thinking.

A weekly newsletter sharing instances of hope, humor, and humanity.

Hello readers! Welcome back to the FGF newsletter. Here are a few of the cheering or compelling things I’ve come across this week.

As always, if you have anything you’d like to share – articles, podcasts, books, interesting finds – email me at cambria [at] simplyrecipes [dot] com with the title “Feel Good Friday.” Thanks for being a part of our community!

What I liked this week:

  • The radical quilting of Rosie Lee Tompkins. Her quilts are absolutely breathtaking. See more of them online at the Berkeley Art Museum and Pacific Film Archive (BAMPFA).
  • Always up for some throwback tunes and videos courtesy of The Nostalgia Machine.
  • I’ve read great things about Dictanote if want to try out voice dictation for emails, to-do lists, and notes.
  • Speaking of to-do lists, I kind of really love and want this.
  • Paper airplane designs. All of them. Because it’s good to change it up.
  • Bookshop is an online bookstore with a mission to financially support local, independent bookstores. Love this!
  • My life in weeks. Powerful.
  • Bookmarked: The ultimate cheatsheet for critical thinking.
  • Every week I’m discovering fantastic new-to-me newsletters, from which I glean a lot of the interesting tidbits you find in this email! If you’re looking for great newsletters to subscribe to, this list will get you started. Also, Letterlist. Two of my current favorite newsletters are Recomendo by Kevin Kelly, Claudia Dawson, and Mark Frauenfelder, and Noticing from Jason Kottke.
  • It’s the 4th of July this weekend! What are you cooking? I’m strongly considering making this Red, White, and Blue Layer Cake.

Wishing you a healthy and hopeful holiday weekend. (And lots of alliteration, apparently!)

Looking for a fun, family-friendly thing to do at home this summer? Try a backyard s’mores party!

That’s what Simply Recipes’ Community Manager Claudia Cash did:

Like many of you, my summer plans changed drastically this year. With camping trips cancelled, a family vacation postponed, and many parks still closed in my state, I’m spending a lot more time this summer at home with my five little girls.

I have always tried to make the best of every situation, so I am looking at this as a fantastic opportunity to do some fun things at home—like have a backyard s'mores party!

From a s’mores smorgasbord to s’more kits for kids, Claudia shares so many fantastic ideas for a really fun family event.

And just wait till you see the setup she came up with for toasting s’mores!

Recipe of the Day: Grilled Mexican Street Corn (Elote)

Recipe of the Day: Grilled Mexican Street Corn (Elote)

Mexican street corn is a staple of summer and it’s easy to make at home!

Top char-grilled corn on the cob with a creamy sauce, sprinkle with crumbled cheese and dive in. Those charred kernels and the tangy sauce really make this different from your everyday corn on the cob.

Serve it alongside Carne Asada, Fish Tacos, or Grilled Salsa Verde Chicken. Delicious, and exactly what we’re craving right now.
