So now we freeze our own rice! It works great and is much more economical, as you would expect. It's also easy to incorporate this prep step into your routine—if you find yourself making rice for a meal, just make twice as much, so you'll have some to freeze for next time. Of course, you can also have a dedicated prep day (like a Saturday!) where you freeze some rice for future meals.

Our team has found ourselves in a funny predicament: we have more time at home to cook and yet, we still find ourselves looking for quick weeknight meals (and the occasional baking recipe) to feed our families. To that end, this week's meal plan hits all the right notes: short ingredient lists, speedy, and perfectly suited for cozying up indoors and enjoying a meal. We've got Joe's Special (Scrambled Eggs with Spinach, Beef, and Mushrooms) and Easy Avocado and Black Bean Quesadillas, both guaranteeing that dinner is ready in thirty minutes or less. We're talking New Jersey Italian Hot Dogs (hello, comfort food), Chinese 5-Spice Skillet Chicken and a Cod Sautéed in Olive Oil with Fresh Tomatoes (no measuring cups or spoons needed). Plus, this week we threw in a batch of Best ChocolateBrownies because that's what we could all use right now!

Lemon bars are to dessert what Tigger is to Winnie the Pooh. You'd be hard-pressed to find a friendlier, more accessible, or sunshine-y sweet treat. And who doesn't need a little sunshine in their life right now?! These lemon bars pack a pucker that's tamed by a slightly sweet, buttery, and crisp shortbread crust. The lemon curd is firm enough to hold its shape when cut, but still rich and creamy like pudding. So, go on. Treat yourself!
