As the reality of Covid-19 is now the new normal, we at Simply Recipes are looking for brief respites from the anxiety and uncertainty that threatens to overwhelm. We need life-affirming reminders of the power of hope, humor, and humanity in the midst of this crisis, and we're guessing you do, too! Welcome to Week Two of our Feel Good Friday newsletter, wherein I share some of the more cheering or compelling things I've read or watched this week. Have you discovered something great recently? A favorite new podcast? Something you read that made you smile? Tell me about it! Email it to me at cambria[at]simplyrecipes.com with the title "Feel Good Friday." What We're Reading This Week:
Quarantined Berklee College of Music students come together virtually to perform "Love Sweet Love."
Yale's super popular "happiness" class is now free online. "In weekly installments, [the] lectures dole out advice on building personal happiness and productive habits, stressing not only the importance of mental wellbeing but also practical ways to achieve it," as described here.

Lemon bars are to dessert what Tigger is to Winnie the Pooh. You'd be hard-pressed to find a friendlier, more accessible, or sunshine-y sweet treat. And who doesn't need a little sunshine in their life right now?! These lemon bars pack a pucker that's tamed by a slightly sweet, buttery, and crisp shortbread crust. The lemon curd is firm enough to hold its shape when cut, but still rich and creamy like pudding. So, go on. Treat yourself!

A long-simmered one-pot meal of corned beef cooked to perfection and served with tender cabbage, potatoes, and carrots would please any Irish-American on St. Patrick's Day. Add some mustard or a creamy horseradish sauce, and you have a true celebration. (Step back from the green beer, people!) This plain dish is both pleasurable and appealing, and worth making more than once a year!

The month of love and hearts has come and gone (all too quickly, I might add), but the Simply Team is ready for March and maybe even a glimpse of spring! As always, we are working behind-the-scenes drumming up new recipes, taking all the photos, and sending those recipes to our Simply Testers who make and test every single recipe that goes on our site. But before we get carried away, let's see which recipes you were loving the MOST in February. February was a big month for classics with a twist. In case you missed any of these fan favorites, it's not too late to get in on the (delicious) fun!

Welcome to a new series we're calling Ask the Team! You ask us questions and we answer. Today Megan Gordon answers a reader's question about egg substitutes.Reader question: "What is a good egg substitute when baking? We have egg allergies in our home." Great question, and thanks for writing in! Sometimes big changes can be overwhelming, but luckily baking all your favorite treats without eggs isn't too tough once you get into the swing of it! I have friends who really like the egg substitute from Bob's Red Mill, but I think it's easier to make a "flax egg." I know, I know, it sounds a little out there. But it's easy and it works!
