If there is a more convenient (and versatile!) food than a rotisserie chicken, I have yet to find it. Even the most run-of-the-mill supermarkets have them, not to mention price clubs and specialty markets.

While you can certainly just eat the chicken as is (I love serving it hot alongside a salad), stashing one in the fridge means all kinds of future meals are in the cards. Use the chicken as an ingredient for a quick weeknight dinner or simply slice it and tuck a few pieces into a lunchbox.

Shredded, diced or sliced, rotisserie chicken meat is the perfect springboard for your next easy meal!

Case in point are the crazy-delicious Blistered Shishito Peppers, one of my favorite snacks come September (and we always have the same debate: are the smaller ones or larger ones spicier?!)
