Simply Recipes Meal Plan: October 2018, Week 4

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes contributors and recipe testers!

October creates mixed emotions when you live in the center of Texas. On one hand, the calendar tells you it's autumn — as does the "pumpkin spiced" everything — but when the temps are still in the high 90's, you find it hard to get into the fall spirit.

For my meal plan this week, I'm going to conjure the ghost of autumn with meals I can double and freeze as well as hearty dishes perfect for cooler temps.

By now, you should see turkeys available in your grocery stores so grab one while you're on your grocery run. October is also sweet potato and broccoli season, so I'm making use of them, too. Let’s get cooking!

Hi, friends! With all your busy fall schedules, I hope you're not forgetting about the most important meal of the day: BREAKFAST! If you've got an Instant Pot, then your week is set. Just make a big batch of Pressure Cooker Apple Cinnamon Oatmeal and you'll have breakfast for days! (And if you don't, just make it on the stovetop; it take a little longer, but will be just as good!)

If you're in a baking mood, I highly recommend our Whole Wheat Bread. I made it myself last week and have been enjoying it for lunch sandwiches and late-night toast with cocoa. I forgot how nice it is to have fresh-baked bread in the house!
