This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes recipe testers! In many parts of the United States, school children are on or headed into Spring Break, and so many parents, both stay-at-home and working, struggle with meal plans to accommodate the break in routine. As a homeschool mom, myself, I'm used to preparing at least three meals a day, but many days, I leave my almost-teenage kids to plan and prepare their own lunches, or rope them into helping make dinner. For me, it not only teaches them to be self-sufficient, but it gives me a break from having to make a whole meal. This week I'm planning for meals that both taste amazing and that aren't too difficult for young ones to help prepare if they're home on break. Might as well keep them occupied, right?
