Happy Monday, friends!
Have you ever heard of breakfast cookies? As someone whose mom never let us have sugary cereal for breakfast, the idea of a cookie for breakfast sounds both delightful and also like I'm getting away with something sneaky. But imagine my surprise when I found that breakfast cookies are actually a great way to start the day! This week's Oatmeal Almond Butter Breakfast Cookies are made with all sorts of protein- and fiber-packed ingredients. (Plus a handful of chocolate chips because, well... they ARE cookies after all!)

Meal Plan Oct Week 5

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes contributors and recipe testers!

The holidays are officially underway! Well, at least as far as I'm concerned, they are.

The last week of October always makes me feel nostalgic for childhood. Between the excitement of Halloween and the eager anticipation of holiday breaks from school, I was of no use to any of my teachers.

Now I view the holidays through the eyes of my children. Their favorite holiday is Thanksgiving, so I'll begin prep for the Turkey Day meal this week. Since I'm going to be juggling that, meals that are quick, filling, and freezable are what's on this week's meal plan.

Hi, friends! This week, I think you should treat yourself to a batch of our Soft Frosted Sugar Cookies! If you love those Lofthouse sugar cookies from the grocery store, then you won't be able to resist these. I made a batch last week for a party, and they were gone immediately. (Plus they're so cute!)

And to balance your sugar consumption, I highly recommend making a batch of Smoky Vegan Lentil Stew. This is such a cozy, warming soup, and very filling.
