Cabbage Soup

Cabbage, the Rodney Dangerfield of vegetables. It just can’t seem to “get no respect”. While under-appreciated, cabbage really is a wonder vegetable. Not only is it relatively inexpensive, but it lasts two or three times as long as any other vegetable in the fridge. Whether raw in a coleslaw, blanched with butter, or stuffed and wrapped, cabbage is a work horse.

After a week with the flu, when I looked in my fridge to see what I could make, the only vegetable in good shape looking back at me was a lovely head of cabbage. Thus the spark of inspiration for this cabbage soup. When you’re sick, if you’re up for making anything at all, you want it to be easy, nourishing, and light. Which is exactly what this cabbage soup is. It’s also incredibly good!

Simply Recipes: 3 New Recipes - Dijon Chicken and more...


Dijon Chicken

On my first trip to France in my early twenties, I came back with a set of French blue handled bistro flatware that I ended up using for years, and 7 jars of various types of Dijon mustard. The mustard! I couldn’t get over how good the mustard was, and so many varieties. There was Dijon with herbes de provence, Dijon with tarragon, smooth Dijon, whole grain Dijon. For a girl raised on the bright yellow hot dog mustard, I was in heaven. These days I always have at least a couple jars on hand in the fridge, perfect for this Dijon chicken recipe.

Green Smoothie

Do you ever find it challenging to eat all of your recommended daily servings of fruits and vegetables each day? Sometimes I do. And, I admit it. I'm a little late to the game on this one. For years I've been hearing people talk about adding greens like kale or spinach to their morning smoothies, saying, "You don't even know it's in there." Well, I didn't buy it. Until, I tried it. Now, greens are a regular feature in my morning smoothies.

Gremolata

Gremolata. This is one of my favorite condiments. Parsley, garlic, and lemon zest—the most basic of ingredients, yet together, they are cymbals in the food orchestra. Noisy alone, but perfect to accentuate a lamb stew or veal osso buco. Just as you are easing into a savory, meaty bite, the slightly bitter tang of the gremolata will wake up your senses. A little sprinkle of gremolata is sometimes all that you need to take a dish from good to great.
