How to Cook One Dinner That Makes Everyone Happy

If you feel like dinnertime turns you into a short order cook for your family, you are not alone.

One kid is a vegetarian, another hates spicy foods, someone else is just plain picky. Sometimes we feel like we have to make multiple dinners to keep the whole crowd happy (or reluctantly reach for the box of mac and cheese).

The solution: Find “Fork in the Road” dishes that let you cook one meal, but adapt it in different ways to suit multiple palates.

{NEW!} Chocolate Chip Cheesecake Bars, Gazpacho with Avocado, Zucchini Lasagna Rollups AND MORE!

Latest recipes from Simply Recipes.

Happy Monday, friends! We had so many great recipes this past week that I hardly know where to start! If it's hot and humid where you are, then our Gazpacho with Avocado and Corn is a sure bet -- I love the creaminess that the avocado adds.

And you're going to want to hang on to this recipe for Chocolate Chip Cheesecake Bars, because I predict it will make frequent appearances at tailgating parties, potlucks, and bake sales this fall! (Chocolate chip cookies + cheesecake? How can you go wrong?!)

Chocolate Chip Cheesecake Bars

by Cindy Rahe

Chocolate chip cookie + cheesecake = chocolate chip cheesecake bars! Why choose one when you can have both?! Bonus: these cheesecake bars are ready in about half the time as regular cheesecake.

Zucchini Lasagna Roll-Ups

by Sally Vargas

Think of these zucchini roll-ups as like lasagna, but without the pasta! Precooking the zucchini softens it enough to roll it up with some cheese and herbs. Top with a quick fresh stovetop tomato sauce, bake, and serve!

Gazpacho with Avocado and Corn

by Sally Vargas

Gazpacho is meant for hot summer nights when turing on the stove is a chore. Add avocado and corn for a more complete meal! Gazpacho needs to be made ahead and chilled, but that also means you have lunch or dinner right in the fridge, ready whenever you are.

Pasta with Roasted Tomatoes and Herb Cashew Sauce

by Erin Alderson

Pasta? Check. Roasted tomatoes? Check. Creamy vegan cashew sauce? Absolutely CHECK! This recipe is so simple, but it delivers big on both flavor and creaminess. Make the cream sauce ahead of time and dinner is ready in no time.

How to Make Creamy Vegan Cashew "Cheese" Sauce

by Erin Alderson

Use this creamy vegan cashew cream sauce in place of dairy-based salad dressings and pasta sauces! Just because you're not eating dairy doesn't mean you can't have something creamy in your meal. Make a big batch and use it all week long.

Meal Plan August Week 4

Meal Plan August Week 4

Some of you may have already entered the Back-to-School Zone, while others (like me) are seeing it just around the bend.

This the moment when many of us become determined to shake up our dinner routines and find some new go-to recipes to insert into the rotation – dinners that the whole family will greet with enthusiasm.

In most parts of the country we are still enjoying the tail end of the most robust produce season of the year, and the grills are in heavy rotation – we know that those one-pot meals and rich roasts will be coming along soon enough.

THIS WEEK: Buttermilk Fried Chicken, Easy Vegetable Fried Rice, Grilled Shrimp Tacos with Mango Avocado Salsa and more!

21 Best Recipes with Ripe Summer Tomatoes

21 Best Recipes with Ripe Summer Tomatoes

21 Best Recipes with Ripe Summer Tomatoes

Nothing beats a fresh tomato right from the garden. Or the farmers' market. Or a roadside stand. Any of these locations will do, really.

We want to eat these ripe summer tomatoes in as many ways as we can before drought or blight take over the plants, or—worse yet—before we have somehow exhausted our desire to eat them. (Blasphemy!)

Luckily, we love tomatoes here at Simply Recipes and so you'll never run out of tasty and easy ways to celebrate them in their various glories. All the usual suspects are here—gazpacho, panzanella, Caprese salad, bruschetta—along with ways to put them up for all year long use, in a basic sauce or a salsa you can yourself.

P.S. Hey, are you inundated with zucchini, too? Check out our round-up for great ideas on using up your haul!
