Black Bean Burrito Bowl

What’s a burrito bowl? A burrito without the tortilla wrapping. A bowl of steaming hot rice, topped with savory beans, and each and every taco topping you want—salsa, avocados, cilantro, guacamole, jicama, lettuce or cabbage. Here’s the thing with a burrito bowl, it can be made in 15 minutes with pantry items and toppings from the fridge. Canned beans, reheated frozen cooked rice, prepared salsa. It’s fast, it’s easy, it works.

Or you can take your burrito bowl to another level and cook your beans from scratch, or even make Spanish rice or cilantro rice. For this burrito bowl pictured here I cooked up a bag of beautiful Rancho Gordo black beans from scratch, in a cumin, garlic, and bay leaf infused broth. We also experimented with canned beans, which if you use, you will want to reheat with a few extras.

Artichoke Leek Frittata

Frittatas, as simple as they seem, can be a challenge to pull off well. The secret to a perfect frittata, or almost any egg dish for that matter, is slow cooking. A frittata should be firm enough to have structure, while at the same time, tender to the bite. If you cook the egg mixture too fast, the result will be dry, crumbly, and off-tasting.

The simple pantry ingredient that will help make your frittata wonderfully tender, while still respecting the structure of the eggs? Cottage cheese. Not fan? No worries. The cottage cheese will melt into the surrounding eggs and other ingredients, and just make it all taste good.

Salmon Chowder

My mother and father live down the street from me, just a few houses away. This is wonderfully convenient for yours truly, who often finds herself heading over to their house to raid their fridge. No, I’m not a teenager, but yes, I still do raid their fridge. (You would too, my parents have great leftovers!)

Thankfully for mom and dad, the arrangement goes both ways. They stopped by the other day when we had just finished up cooking this salmon chowder, and happily packed half of it to take home with them. The verdict the next day? Raves.

Deviled Ham with Pickled Jalapeños

Do any of you follow Mad Men? I watch an occasional episode, more captivated by the outfits and decor than anything else. (Wait, I recognize that wall hanging! My mother used to wear dresses like that! My father wore those skinny ties!) So delightfully retro. Like deviled ham.

I can just imagine some deviled ham canapés being served at one of those 60s parties. Being just a kid during that time I would more likely have found a deviled ham sandwich along with carrot sticks and a thermos, packed in my metal Voyage to the Bottom of the Sea lunch box.
