NEW RECIPES! Instant Pot Chicken Tortilla Soup, Cheesy Potato Casserole, and MORE!

Latest recipes from Simply Recipes.

Hi, everyone!

Greetings from Week 2 (or is it 3?) of not leaving the house. Thankfully my stores of everything except onions are holding strong. I had no idea I cooked with so many onions!

One thing I've been thinking about a lot (other than a lack of onions in my life) is how we can still have celebrations during this time of sheltering in place. We have Easter coming up, and graduations after that. I know of a lot of friends with birthdays in the near future — including my own at the end of the month! Dialing back our expectations for these gatherings is a must, but how do we still make them special?

Here are a few ideas I've heard:

  • For Easter, what about organizing a neighborhood Easter egg hunt where everyone "hides" a picture of an Easter egg in their front windows for kids to hunt for as they go on walks?
  • Decide on an Easter menu with your family, and then cook it together virtually via Skype or Zoom
  • For her birthday, a friend's daughter baked cupcakes and then left one on each of her friends' doorsteps while they waved to each other through the window. So sweet!
  • Another friend is planning to spend her 40th birthday hosting a series of Zoom calls with friends from high school, then college, then grad school, all spaced throughout the day.

Please let me know any ideas you have for how to make celebrations feel special in the coming weeks. Cook well! Be well!
