Hello, friends!

Our recipe for Garlic Butter Pretzels this week got me thinking about GARLIC. Confession: I hate -- really hate -- chopping garlic. It's my least favorite dinner prep step because it's just so sticky and finicky.

Here is my secret to less fussy minced garlic: Use a microplane. I hold the clove by the root end and just run it over the microplane a few times. It takes seconds and I'm left with a mound of garlic ready for the skillet.

Granted, this garlic is closer to garlic paste than to minced garlic, but in the vast majority of recipes, including today's Garlic Butter Pretzels, it doesn't make much of a difference. The garlic virtually melts into whatever you're cooking, giving you a subtle garlic flavor in every bite (delicious!). Just keep an eye on the garlic during cooking as it will burn more quickly than regular minced garlic. I usually add it toward the end of cooking, stir it around until I smell fragrant garlic, then take the dish off the heat.

Oh, and quick tip! Clean your microplane right away so the leftover garlic bits don't dry and glue themselves to the metal. If this does happen, just soak the microplane in warm water for a few minutes before scrubbing it clean.
